Ishtu

Ishtu or Vegetable Stew is an excellent side dish served for Idiyappam and Aappam. Mixed vegetables are cooked in coconut milk. The stew is midly spiced with ginger and green chillies.  i have used sprouted fenugreek seeds along with potatoes. It is an OPOS dish.

Ingredients:

  • 2 Medium Size Potatoes
  • 1/4 Cup Sprouted Fenugreek Seeds
  • 2 tbsp Chopped Ginger
  • 2 Slit green Chillies
  • 1 Cup thick Coconut Milk
  • 1 tsp Coconut Oil
  • 1/2 tsp Salt
  • A few Curry Leaves

Directions:

  1. In a 2 Ltr Pressure Cooker
  2. Layer 1: Coconut Oil + 1/4 Cup Water
  3. Layer 2: Ginger, Green Chillies
  4. Layer 3:Chopped Potatoes
  5. Layer 4: Sprouted Fenugreek Seeds
  6. Layer 5: Salt, Curry Leaves
  7. Cook for 2 Whistles on high. Switch off. Carefully  release pressure and add coconut milk. Mix thoroughly and serve.
