In the kids friendly snacks series, today I am sharing a very healthy, tasty and easy burfi recipe. It is made using legumes, millet, organic jaggery and ghee. Instead of sugar loaded sweets made with refined flour, try this healthy recipe and satisfy your kid's sweet cravings!

  1. Dry roast green moong, black urad dal and millet separately till they slightly change colours and become fragrant.
  2. Roast sattu on low heat till it is warm. Long roasting is not required since it is made out of roasted gram.
  3. Grind the roasted dals and millet to a fine powder. Sieve and repeat the process till the entire flour is fine. Alternatively, you can send it to a mill and make powder.
  4. Add almond powder, kopra powder and cardamom powder. Mix everything well. This will measure approximately 3.5 Cups.
  5. Heat a pan add jaggery powder and water. When the syrup starts boiling, switch off the stove. Add the powder in 2 batches and give a good mix. Finally add ghee.
  6. Transfer this to a well greased plate, spread evenly and press tightly using the potato masher.
  7. Leave it for 10 minutes. Cut into desired shapes and when cooled completely store in an air tight container. This stays fresh for more than 10 days in room temperature.

Note:

1. The mixture can be made into laddu instead of spreading on  a plate.

2. Can add some ghee fried raisins and cashews.

3. Millet flours can also be used instead of grains. In such case, roast the flour well till nice aroma on low heat. Any millet flour can be used for this recipe.
