Ingredients:

  • 1 Cup Foxtail Millet Flour
  • 1/4 Cup Besan/Kadala maavu
  • 2 Tbsp Kasoori methi/dried methi leaves
  • 2 Tbsp Hot Oil
  • 2 Tbsp Hot Oil
  • 2 Tbsp Hot Oil
  • 1/2 Tsp Salt
  • 1/2 Tsp Salt
  • 1/2 Tsp Salt
  • 1/2 Tsp Crushed Pepper
  • 1/4 Tsp Carom Seeds/Omam/Ajwain
  • 1/4 Tsp Turmeric Powder
  • 5 Tbsp Warm Water for making the dough (approx)

Directions:

  1. In a wide bowl, add millet flour, besan, salt, pepper, turmeric powder, ajwain, crushed kasoori methi and mix well.
  2. Add hot oil and initially mix with a fork. When warm enough to handle, mix thoroughly with fingers so that the flour becomes crumbly in texture.
  3. Now add warm water little at a time and make a soft dough. Keep covered for 10 minutes. Meanwhile preheat the oven and line a baking sheet on the baking tray.
  4. After 10 minutes, divide the dough into 2 parts. Roll out one part into 1/2'' thick roti while keeping the other covered in a bowl. Randomly prick the roti with fork so that the crackers don't puff up while baking. Now cut them into desired shapes.
  5. Bake the crackers at 180 Deg for 12 to 15 minutes. After 7 minutes, flip them and bake. When they turn slightly golden, remove and allow them to cool. The time may vary, so keep a watch on the colour of the crackers.
  6. Healthy crispy crackers are ready. Repeat the same procedure for the remaining dough. Store them in an air tight container.
