Pinni is a Punjabi delicacy that is mostly prepared during winters. This laddu is made with wheat flour, desi ghee, dry fruits and jaggery. For this recipe, I used dates as a natural sweetener and replaced wheat flour with jowar flour.

Ingredients:

Directions:

  1. On a low heat, dry roast Jowar flour till nice aroma. Transfer it to a wide bowl.
  2. Next dry roast the seeds and remove.
  3. Add 1/4 Cup ghee and roast cashews and almonds.
  4. Crush the seeds, almonds and cashews coarsely and add to the roasted flour.
  5. Grind dates to a paste without using any water.
  6. Add the balance ghee and cook dates paste till it becomes soft and mix with the other ingredients along with ghee and cardamom powder.
  7. Mix everything well with a ladle. When it is warm enough to handle make laddus and once it is completely cooled store in an airtight container.

Note:

1. Actually for this recipe, the measurements are completely based on individual preference. You can include roasted and crushed peanuts, flaxseeds, white sesame seeds, grated and roasted coconut etc.

2. Can increase/decrease dates quantity.

3. Can use other millet flours for this recipe.

4. For walnut flour and roasted gram flour just pulse them using mixie.

  1. Thank you for this recipe ! I am gluten free so glad to have found this. My husband is allergic to walnuts / peanuts though – could you suggest another nut that can be used instead ? Will almond flour work ?

    1. Hi,
      You can use any nut powder which suits you instead of walnuts and peanuts. Use pista, cashews etc.

  2. Please never say that sweets made with Jaggery and dates are sugar free. They are not good for people with Diabetes. Doctors have always advised not to take jaggery or dates thinking it is natural, for it can really spike up the sugar level a lot. Same with Bananas and Mangoes. I don’t mean to offend you, but it is a fact.

      I have not mentioned anywhere that this recipe is sugar free. I clearly mentioned that I replaced jaggery with natural sugars from dates. Thanks so much for sharing your thoughts.
