Sevai is a South Indian dish where rice flour dumplings are made into sevai/noodles and spiced up with different ingredients for varieties. Nowadays millet semiya varieties are easily available and I used Pearl Millet/Kambu semiya to make this quick, tasty sevai varieties. 

Ingredients:

  • 1 packet of Millet Vermicelli
  • 1/2 Cup Grated coconut for coconut sevai
  • 1 Tbsp Lemon Juice for lemon sevai
  • 1/4 Tsp Turmeric Powder for lemon sevai
  • 1/2 Tsp Salt for each variety

Seasoning 1:

  • 1 Tbsp Coconut oil
  • 1/2 Tsp Mustard seeds
  • 1 Tsp Urad Dal
  • 2 Tbsp Peanuts
  • 1/4 Tsp Asafoetida
  • 2 Red Chillies
  • 10 Curry Leaves

Seasoning 2:

  • 1 Tbsp Sesame oil
  • 1/2 Tsp Mustard Seeds
  • 1/2 Tsp Urad dal
  • 1/2 Tsp Chana Dal
  • 2 Tbsp Peanuts
  • 2 Red Chillies
  • 10 Curry Leaves
  • 1/4 Tsp Asafoetida

Directions:

  1. Wash the millet semiya and drain. Place them on a wide bowl or a steamer
  2. Using a pressure cooker, cook them for 2 whistles. Release pressure immediately.
  3. Divide the cooked semiya in 2 parts. Fluff up with a fork.
  4. Add grated coconut, salt and seasoning 1 to one part. Mix thoroughly.
  5. Add turmeric powder, salt, lemon juice and seasoning 2 to other part. Mix well.
  6. Yummy millet sevai varieties are ready!
