Aval/Poha laddu is a very easy sweet which can be prepared in 15 minutes. Palm jaggery is a rich source of minerals. It promotes better digestion, reduces mensural cramps and nourishes the skin. Palm jaggery is rich in iron, which increases hemoglobin levels, thus treating anemia. Try this easy recipe to satisfy your sweet cravings in a healthy way.
Ingredients:
- 1 Cup Kodo Millet Poha/Aval
- 1/3 Cup Palm Jaggery/Karuppatti
- 1/4 Cup Water
- 5 Cashes broken into pieces
- 2 Tbsp Coconut Oil/Ghee
- 1/4 Tsp Cardamom Powder
Directions:
- Dry roast poha on medium heat till it becomes crisp. Let it cool. Grind it to fine powder.
- In a pan add palm jaggery and water. Boil till it becomes slightly thick and sticky. Heat another pan add oil and fry the cashews.
- Transfer the ground poha into a wide bowl. Add cardamom powder, fried cashews along with oil and mix well.
- Now add the palm jaggery syrup by filtering through a strainer. Mix everything well and make laddus when the mixture is warm enough to handle.
- Delicious Karuppatti laddus are ready.
Note:
- Any millet poha variety can be used for this recipe.
- Can increase karuppatti for more sweet version.
