Beetroot Pulav

A simple tasty pulav using Beetroot. A flavourful healthy millet variety which can also become as a lunchbox dish. The colour and taste will definitely attract the kids!

Ingredients:

  • 1 cup Kodo Millet
  • 1 cup Kodo Millet
  • 1 cup Kodo Millet
  • 2 tbsp Oil
  • 2 tbsp Oil
  • 2 tbsp Oil
  • 1 onion cut into long slices
  • 1 tsp ginger garlic paste
  • 3/4 cup cut beetroot
  • 1/4 cup peas
  • 3/4 tsp salt
  • 3/4 tsp salt
  • 3/4 tsp salt
  • 3/4 tsp chilli powder
  • 3/4 tsp dhaniya powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp fennel seeds (saunf)
  • 1 clove
  • 1 bay leaf
  • 1 cardamom
  • 1 cinnamon
  • 1 tbsp chopped coriander leaves
  • 1 tbsp chopped spring onion (optional)
  • 1.5 cups of water + 2 tbsp

Directions:

  1. Wash and soak the millet for 30 minutes. Drain.
  2. Heat a 2 litre pressure cooker, add oil and all whole spices one by one. Add onion and sauté till they become transparent. Add ginger garlic paste and sauté for 30 seconds.
  3. Add all the spice powders and sauté for 30 seconds so that the raw smell goes off.
  4. Add the drained millet, beetroot and peas and salt and spring onions.
  5. Add 1.5 cups of water and mix everything well.
  6. Close the cooker and cook for  2 whistles on high.
  7. Let the pressure settle down. Open fluff up and mix in chopped coriander leaves before serving.

      Thanks for your visit. If you use basmati rice, if you are using soaked rice 1:1 water will be perfect.

  3. Hi VV, this is Mridula from our opos school. I tried this with foxtail millet. Unfortunately, that’s the only millet I found here. Its very good. I scaled it up so that I can take it for lunch the next day for me and hubby.
    Children arent into millets yet, maybe one day.

      Happy to get a validation from you! You can use foxtail millet for almost all recipes shared in the site. Please try other recipes like Tahiri, burnt garlic rice, capsicum rice etc.

  4. Beetroot pulao has become a regular lunch box menu in our house. We generally make kootu or poriyal with beetroot. But pulao was a new to me. I make it with millets for me and hubby and with basmathi rice for children. The colour of the pulav is really inviting. Goes well with onion and cucumber raitha. Thanks you.
