Thavala Adai is a famous Tambrahm recipe made with rice and lentils. This protein rich dish can be served as breakfast, snack or dinner. I used Foxtail Millet for this recipe. Millets give extra crispiness to the dish compared to rice. Adding beetroot gives a vibrant pink colour and makes the adai all the more healthy!

Ingredients:

Seasoning:
  • 1/2 Tsp Mustard Seeds
  • 1/2 Tsp Urad Dal
  • 10 Chopped Curry Leaves
  • 1 Tsp Oil
  • 1 Tsp Oil
  • 1 Tsp Oil

Directions:

  1. Wash and soak millet and dals together for 3 hours.
  2. Grind to fine rawa consistency using very little water along with red chillies, asafoetida and coconut.
  3. Let the batter be thick.
  4. Add salt and grated beetroot and allow it to ferment for 2 hours.
  5. Transfer the seasoning to the batter and mix well.
  6. Using a kadai/curved pan make small adais. Pour half a tsp oil around and cook them on medium heat. Once the bottom side becomes crisp, flip and cook the other side.
  7. Remove and serve with chutney.

  1. Awesome recipe, loved the taste. Was a little afraid that it may be too sweet due to the beetroot but surprisingly I did not taste it at all. I did however increase the dry red chillies count to 7 as I prefer it to be more spicy. Thank you so much for such a healthy recipe and your detailed steps

    1. Hi Subhashree,
Thanks for trying immediately and sharing your experience. I didnot suggest jowar or Pearl because they need long soaking time. Happy to see a healthy adai!! Keep sharing more!!

    1. Hi subashree,
Yes, you can use either Kodo/Little or Barnyard millets instead of Foxtail.
