Cauliflower Rice

This recipe is for Cauliflower lovers! Cauliflower is one of the popular vegetable. A cup of this flower has 100% daily recommended amount of Vitamin C, about a quarter of Vit K, 6 % Potassium, 3% of magnesium and 2% of Calcium. A very tasty rice variety can be prepared with this flower using simple ingredients along with millets. This is a very good lunch box recipe!

Ingredients:

  • 3 Cups Cauliflower Florets
  • 4 Cups precooked and cooled Kodo Millet
  • 1/2 Cup Chopped Onions
  • 1/4 Cup Green Peas
  • 3 Tbsp Vaangi Baath Masala
  • 2 Tbsp Chopped Coriander Leaves
  • 1.5 Tsp Salt
  • 1.5 Tsp Salt
  • 1.5 Tsp Salt
  • 1/2 Tsp Turmeric Powder
  • 1/2 Tsp Chilli Powder
  • 1/2 Tsp Coriander Powder
  • 1 Slit Green Chilli
  • 10 Curry Leaves
Ingredients for Seasoning:

Directions:

  1. Heat a pan on medium heat, add oil and do the seasoning. Once done, add onions and sauté for a minute till they become slightly soft.
  2. Add cauliflower florets, peas, water and turmeric powder and salt. Cover and cook for 3 to 4 minutes till the florets become soft. Mix a couple of times in between.
  3. When the florets absorb the water and become soft, add vaangi Baath masala and mix well. Add chilli powder, coriander powder and mix well.
  4. Add 4 Cups of millet and mix everything well. Cover and cook on lowest heat for 3 minutes so that all the flavours are thoroughly mixed. Finally mix once and switch off the heat. Let it sit on the retained heat for a few more minutes.
  5. A flavourful cauliflower rice is ready! Serve with raita or simply with curd.

Note:

  • Other Millets like Foxtail, Barnyard or Little can be used for this recipe.
