Cucumber /Southekayi Idli

Cucumber Idli

Cucumber Idli is known as Southekayi idli or Kadubu is an age old recipe of North Karnataka. Cucumber, grated coconut, green chillies are mixed with rava/sooji to make this dish. I used Kodo millet for this recipe.

Ingredients:

  • 1/2 Cup Fine Kodo Millet Rava
  • 1/2 Cup Grated Coconut
  • 1/2 Cup Grated Cucumber
  • 2 Tbsp Curd
  • 2 Green Chillies
  • 1 Tsp Sugar
  • 1/2 Tsp Salt
  • 1/2 Tsp Cumin Seeds
  • 1/8 Tsp Baking Soda
  • 2 Tbsp Grated Carrot
Seasoning:
  • 1 Tsp Oil
  • 1/2 Tsp Mustard Seeds
  • 1/2 Tsp Cumin Seeds

Directions:

  1. Make fine rava of Kodo millet by grinding in a mixie.
  2. Dry roast in a pan on low heat for 3 minutes. Switch of let it cool.
  3. Grind grated cucumber, coconut, green chillies and cumin seeds to a paste without adding water and mix with millet rava.
  4. Add salt, sugar, curd and mix thoroughly.
  5. Add water little by little and make a thick batter. The batter should not be runny. Mine required 1/4 cup water.
  6. Let it soak for 15 minutes. Add baking soda just before steaming.
  7. Grease a plate and spread the batter evenly.
  8. Steam for 15 to 20 minutes till it cooks completely. Insert a fork or knife and if it comes out clean, it is done.
  9. Allow it to cool for 5 minutes. Cut into pieces and sprinkle the seasoning and grated coconut.
  10. Serve with some chutney.

Note:

1. Seasoning is completely optional.

2. Any other millet like Barnyard, foxtail or little can also be used.

3. The water qty depends on how juicy the cucumber is. So add little by little.
