Gatte Pulav

Gatte Pulav is a famous delicacy of Rajasthan.  As vegetables are not available through out the year because of scanty rainfall, this pulav is made using gram flour dumplings during festivals and other important occasions.

Ingredients:

Directions:

  1. Wash and soak millet for 30 minutes. Drain.
  2. Mix the ingredients from No.7 to 9 to make gatte with minimal water and knead to a stiff dough. Shape into small balls. In a 2 Ltr Pressure Cooker add as follows:
  3. Layer 1: ghee/oil,  bay leaf,  water
  4. Layer2: soaked drained millet
  5. Layer3:  salt, chilli powder, garam masala, coriander powder, turmeric powder, asafoetida
  6. Layer4: gram balls
  7. Cook on high for 2W. Let pressure settle.

Note:

1. Little, Barnyard, Foxtail millets can be used for this recipe instead of Kodo millet.

    I tried this recipe yday and found that it is very dry to eat.. each time my Millet rice recipes turns dry.. can you please help point me the mistake

    1. Hi Ramya,
      May be your grains need more water. Try adding 1/4C more for a cup of millets. Or soak longer. This may solve your problem.

      1. I will try the idea of adding lil more water VV..any recipes which involves millets turning mushy works well when I do ..like the ven Pongal or bisibelabath..but when it requires a correct cooked state like pulav,it flops..I will try and let you know..thank you
