Cooks in: 45 Minutes Serves: 4 People

Fresh hot soft idiyappam is a great breakfast option. Millet idiyappam is a low carb dish. The dough becomes pliable after autolysis and helps in keeping the string hoppers soft for a long time.

  1. In a 2 ltr. Pressure Cooker, add water, oil and salt.
  2. Close and cook on high heat for a whistle.
  3. Switch off heat and carefully release pressure.
  4. Add the flour and mix until it resembles like wet sand.
  5. Close the lid with weight on and let it rest for 15 minutes.
  6. Open knead briefly and using the press, make idiyappam.
  7. Steam them for 5 minutes.
  8. Serve with stew or curries.

  1. Hi VV, tried exact steps as mentioned in the recipe for jowar idiyappam….but i found it very difficult to press( even husband could not press it ).. and also after steaming they were not as fluffy as shown in the pic( I greased with oil both my press and idli plate).. plz help..I wanna try one more time

    1. Hi Syeda,
I understand from your comment that your flour requires more water. So while autolysing, add little more water. Or keep warm water in a bowl, dip the balls in to it before putting in the press. This may also help you. Once you arrive at the right water proportion, you’ll get fantastic, soft, fluffy idiyappam.

  2. Thank you so much for the wonderful recipe mam. I tried idiyappam for the first time and it came out perfect. So soft and yummy…We all loved it. Planning to try with a coconut based side dish next time.
