Mushroom Biriyani

Mushrooms are high in nutrients and anti oxidants there by preventing diseases and promoting good health. Came across this recipe recently and I tried with millet and as usual it was perfect in texture and taste! Treat your family with  this simple, easy and tasty biriyani !!

  1. Cook Millet and allow it to cool completely. Please Check my post ''Millet Rice'' for cooking millet perfectly.
  2. In a wide bowl mix curd, mushrooms, veggies, spice powders, gg paste, salt and mint leaves. Keep aside for 30 minutes.
  3. Heat a pan, add oil. Add the whole spices (bay leaf, cardamom, cinnamon, cloves, cumin seeds) one by one.
  4. When they turn aromatic, add the marinated veggies and water. Cook by covering the pan till the moisture is absorbed and veggies become soft but retain the crunchiness. This may take approximately 5 minutes.
  5. Once done, keeping the heat on LOW, add the cooled millet and mix well. Cover the pan and let it cook for 3 minutes. This dum cooking will ensure that the flavours are mixed well with the millet.
  6. After 3 minutes, switch off heat and mix everything well. Cover the pan and let it sit in the retained heat for 5 minutes.
  7. Serve with curd/raita.

Note:
  • Other millets like Kodo, Foxtail, Barnyard, Proso can be used for this recipe.

    Can we soak the millets overnight?, as I need to prepare them in the morning and no time for soaking them..
    asking for not only for this recipe for others too ..plz suggest

    1. Hi Bhargavi,
      Soaking millets overnight is not a good idea. I suggest you measure the millet and keep in it ready. Next day morning as soon as you get up, first thing pour water to soak. It takes hardly a minute. By over soaking, you’ll end up with mushy millet.
