Ragi Pasta Salad

Pasta is a favourite dish of many particularly children. Nowadays millet pasta are also available. One of my friend Suchitra Vishnu Chandar gave me a packet of Ragi pasta when she visited me. Instead of making usual pasta loaded with cheese, I decided to make a salad with it. It was a complete balanced whole meal for us. Try this easy and healthy recipe using millet pasta.

Ingredients:

  • 1 Cup Boiled Pasta
  • 1/4 Cup diced (Beetroot, Cucumber, Carrot, Yellow and Red Capsicum, Tomato)
  • 2 Tbsp Roasted (Almonds and Peanuts)
  • 2Tbsp Olive Oil
  • 2Tbsp Olive Oil
  • 2Tbsp Olive Oil
  • 2 Tbsp Finely Chopped Mint Leaves
  • 1 Tbsp Lemon Juice
  • 1 Tsp Salt
  • 1 Tsp Salt
  • 1 Tsp Salt
  • 1 Tsp Mustard Chilli Paste
  • 1/2 Tsp Pepper Powder
  • 2 Finely Chopped Green chillies
  • 3 Cabbage Leaves for serving

Directions:

  1. In a small glass bottle add oil, lemon juice, salt, mustard paste, pepper powder , green chillies and mint leaves. Close the lid and shake well so that everything mixes well and becomes frothy. Keep aside.
  2. In a wide bowl, add the veggies and the prepared dressing. Mix well. Now add the boiled pasta and mix gently so that they don't break.
  3. Finally, add the roasted nuts and give a quick mix. Serve the salad in a washed cabbage leaf.

Note:

  • Veggies of your choice can be added. Even boiled potatoes, onions, some chopped fruits like green apple, pear, pomegranate cane be added to the salad.
  • Millet pasta is very delicate. For cooking the past, boil water and when it starts rolling, add ragi pasta and cook just for a minute. Switch off and let the pasta remain in the hot water for 30 seconds. Drain the water and wash under cold water so that they remain firm and don’t become mushy.
  • For mustard paste, just grind some yellow mustard seeds with little red chilli powder.
  • Other roasted nuts like walnut, pine nuts and seeds like pumpkin seeds, melon seeds, roasted flaxseeds can also be added to the salad.
