Ragi Mudde is a wholesome food of Karnataka, often served with Huli. The traditional method involves some expertise and making a soft mudde is a tedious procedure. But not any more!

Directions:

  1. Make ragi dough. Please go through my 'Millet Roti' post for a detailed procedure for making the dough.
  2. After resting the dough for 20 minutes, add oil, knead briefly and make tennis ball size balls.
  3. Place these balls in a vessel and steam them for 10 minutes on medium heat.
  4. Excellent Muddes are ready. Serve with huli/sambar.

  1. Can hand pounded raagi flour be used for mudde? Outside layer was hard but inside was very soft insideā€¦

      Hand ponded flour will be more fiberous and it may need more water. I have not used it, you can try.
