Sweet Puttu

Puttu is a sweet dish generally prepared during Navarathri as this is considered special for Ambal. Puttu is prepared by Steaming rice flour and  mixing with jaggery syrup. I replaced rice flour with jowar and used OPOS techniques to get a soft texture. The result was awesome! 

Ingredients:

Directions:

  1. In a small coffee tumbler add jaggery and a tbsp water kept for syrup.
  2. In a 3 Lr Pressure Cooker, add a cup of water.
  3. Place the flour in a vessel and keep the jaggery tumbler beside this. Ensure that water doesn't enter the flour and jaggery containers.
  4. Cook for 8 whistles and open after pressure settles down.
  5. With the help of a fork fluff up and add ghee, jaggery syrup, cardamom powder, cashew nuts and grated coconut. Mix thoroughly.
  6. Soft Puttu is ready!

      Yes, diabetic people can take in small quantity once in a while, if the sugar levels are under control.

  1. made this with bajra atta with some trepidation since its a stronger flour but it tastes good! its wonderful how a little jaggery goes a long way in this.

  2. First of all a very big applause to the person who has worked equally so hard in creating this wonderful website on millets. Vijaya Venkatesh has changed so many people around her to millets diet by her vast range of recipes. Be it breakfast, snacks, main course or Desserts , I think there is no other person to have explored in these areas. From the time she has introduced me to millets , I enjoy cooking and eating each and every dish that is mentioned in this site.
    During Navrathri we make puttu on Tuesdays and Fridays with processed rice flour. This festive season it was a boon to bring in the same dish with millets .The texture of the jowar puttu was so soft and tastes better than rice puttu. A must try sweet.
