Mudakathaan Keerai/Indravalli/Balloon vine leaves are commonly used in Tamil Nadu for treating joint pain. The name 'Mudakku Aruthan' suggests that it helps in relieving the arthritis problem to a great extent. Many dishes like kuzhambu, rasam and concoction can be prepared with these leaves other than dosa. Using them along with millets is an excellent way to include them in our diet. We had this creeper in our home and my grandma and amma used to make dosas very often with these leaves.

Ragi and Millet Milk Recipe

Milk can be extracted from millets. Ragi milk is widely popular and sprouted grains are used for this purpose. Foxtail millet and Proso millet can also be used to extract milk. For this recipe I used Proso Millet. This milk can be used for making smoothies, kheer, popsicle etc. I will be sharing all those recipes soon.

Vellai Paniyaram is a traditional dish  prepared in every Chettinad home for breakfast. The dish gets its name from the colour of the paniyarams! Raw rice is soaked and blended to a smooth batter and deep fried. I used Kodo millet for this recipe and got beautiful paniyarams.

Uthappam is a thick of dosa with veggies added to it. Generally sour dosa batter is turned in to delicious uthappams by adding spices and veggies. In this recipe, I have also included barley  along with other ingredients  which makes the dish more nutritious.
